Ingredients:

  • 1 coconut cream
  • 1 can of chickpeas
  • 1 can of chopped tomatoes
  • 1 red onion
  • 1 clove of garlic
  • 1 tablespoon of peanut butter
  • Salt
  • Rice
  • Curry
  • Other preferred spices
  • Greens of your choosing (spring onion for example)

Method:

  1. Chop the onion and garlic.

  2. Fry the onion and gartlic in somve olive oil.

  3. Put the rice to boil.

  4. Once the garlic is lightly golden, throw in the chickpeas.

  5. While the chickpeas are frying, season them with some curry and other preferred spices.

  6. Throw in the chopped tomatoes.

  7. While the tomatoes are cooking, put in your peanut butter.

  8. Cover it with coconut cream and mix the ingredients well.

  9. Season to your liking and top it off with some fresh green of your choice.

  10. Serve on some rice.
